Abstract

This article analyzes the potential for growth in consumer demand for fruits and vegetables, as well as the factors limiting this process. The study covers the principles of food security, healthy eating, and consumption trends in a market economy. Population growth, rising incomes, urbanization, and a growing interest in a healthy lifestyle are considered the main factors increasing demand for fruits and vegetables. At the same time, seasonality of production volumes, insufficient development of warehouse and logistics infrastructure, price volatility, and importexport policy restrictions are analyzed as important factors limiting demand growth.
