Abstract
This study presents a comparative analysis of antioxidant activity in soybean seeds of Ilhom-6 and Fora varieties under enzymatic hydrolysis conditions. DPPH and FRAP values and their relationship with aglycone content were evaluated. The results showed that at 1.0% enzyme concentration and 60 minutes, Ilhom-6 reached 71.5% DPPH and 9.4 µmol Fe²⁺/g FRAP. Similar trends were observed in Fora, although at lower levels. Regression analysis revealed a strong correlation between aglycone content and DPPH (R² = 0.939).
