Abstract

This article examines current technological trends in the extraction of biologically active substances from cellular lipids, their chemical composition, biological activity, and practical significance in the pharmaceutical, food, and biotechnology industries. It analyzes the physiological functions of phospholipids, glycolipids, sterols, fatty acids, and other lipid compounds present in cell membranes, and discusses methods for extracting biologically active substances from them. Innovative technologies for extracting lipids from microorganisms, algae, and plant cells are also analyzed. The article presents information on modern methods based on supercritical extraction, enzymatic hydrolysis, membrane technologies, and nanoemulsions.
