Abstract

This article analyzes the importance of dried tomato products in the national economy, as well as the chemical composition and nutritional value of tomatoes. The methods of cultivation, storage, and processing of tomatoes, along with the specific features of drying technologies, are discussed. The scientific and practical significance of producing semi-finished tomato products based on varieties grown in the conditions of the Andijan region is substantiated.
